5 medium carrots (peel or don’t peel) chopped into 3 chunks each
1 white or yellow onion cut in half
1 large tomato
3 tablespoon preferred oil
2 cups water or broth
1 teaspoon salt
1 teaspoon chili powder optional
1 teaspoon curry powder optional
1 teaspoon ginger powder optional
1 teaspoon honey
1-2 cloves garlic
Add all ingredients and select high speed function for 10-15 seconds until everything is finely ground. This will help soup cook thoroughly and get extra creamy. Then select soup function 2 for creamy hot soup! Serves 4.
By itself this soup is so good. To mix it up try it different ways! I have used this soup as a base for many things now. I add it to cooked lentils with diced tomatoes and veggies for a creamy nutritional powerhouse meal. Add a little cooked quoina, rice or beans for extra protein. Another way I love this soup is with hot sauce and tortilla chips!
